Vegetarian Lentil Tortilla Soup


This uber easy and crazy flavorful Vegetarian Lentil Tortilla Soup can be made in a pressure cooker, slow cooker, or on the stove, making it one of our favorite make-ahead soup recipes!Recipe yields approx, 6 cups of soup.

Ingredients

1 Avocado
1 Bell pepper
1 15 oz can Black beans
1 Cilantro, fresh
1 cup Corn, canned, or frozen fresh
1/2 tsp Garlic powder
2 Jalapeno
1 cup Onion
1 15 oz can Pinto beans
3/4 cup Red lentils, dried
1 Red onion
15 oz Tomato sauce or crushed tomatoes, canned
Canned goods
1 tbsp Tomato paste
2 1/2 cups Vegetable broth
Condiments
1 Pico de gallo
1/2 cup Salsa verde, mild or medium
Baking & spices
1 tsp Avocado oil
1/4 tsp Cayenne pepper
1/2 tsp Chili powder
1 Salt and pepper
Nuts & seeds
1/2 tsp Cumin
Snacks
1 Tortilla chips
Dairy
1 Cheddar or mex-blend cheese
1/4 cup Heavy cream* ((optional - see notes))
