Italian Lentil Soup


The recipe for this rich and hearty Italian Lentil Soup requires very little time, start to finish, and it takes advantage of lentils luscious state of tenderness. This is a humble soup made with the most humble of ingredients.

2 Carrots, large
3 large stalks Celery
1 tsp Dill, dried
2 cloves Garlic
1 tsp Oregano, dried
2 tbsp Parsley, fresh
2 Red potatoes, small
1 cup Tomatoes, canned
1 Yellow onion, large
Canned goods
6 cups Chicken broth
Baking & spices
1/2 tsp Black pepper, freshly ground
1 Sea salt
Oils & vinegars
4 tbsp Olive oil, extra-virgin
Beer, wine & spirits
1/2 cup White wine or sherry
Liquids
1 1/2 cups Water
Other
1 cup Green or brown lentils (rinsed and stones and debris discarded)
